The reassuring truth
After a week or two in the fridge, a single feeding usually brings a starter right back. Even the jar you forgot for months is almost certainly not dead.
The 10-second check
- Pink or orange discoloration, or fuzzy mold: the only true emergency. Throw it out and start fresh.
- Dark liquid, a dry crust, a sharp smell: looks dramatic, but is harmless. This starter can be brought back.
How to bring it back
- Remove any dry crust and pour off or stir in the dark liquid.
- Keep a small part of the starter from the middle and discard the rest.
- Feed it fresh flour and water and keep it warm.
- Watch for the dome. When it collapses, feed again. Most starters are back within a few days.
