How to revive a neglected starter

Starters are far tougher than their reputation. Even the jar you forgot for weeks is very likely not dead. Here is how to find out and what to do.

The reassuring truth

After a week or two in the fridge, a single feeding usually brings a starter right back. Even the jar you forgot for months is almost certainly not dead.

The 10-second check

  • Pink or orange discoloration, or fuzzy mold: the only true emergency. Throw it out and start fresh.
  • Dark liquid, a dry crust, a sharp smell: looks dramatic, but is harmless. This starter can be brought back.

How to bring it back

  1. Remove any dry crust and pour off or stir in the dark liquid.
  2. Keep a small part of the starter from the middle and discard the rest.
  3. Feed it fresh flour and water and keep it warm.
  4. Watch for the dome. When it collapses, feed again. Most starters are back within a few days.
Be patient after a long break. After months without care, it can take several feedings before the starter rises reliably again.

The full rescue protocol with exact amounts, plus the symptom, cause and solution table for every starter, dough and bread problem, is in the Starter Kit (Module 5).

Frequently asked questions

How long can a starter stay in the fridge?

Many survive several weeks, and a stiff starter often even longer. After one or two weeks, a single feeding usually wakes it up. After months, expect a few days of regular feeding.

Is the dark liquid on top mold?

No. It means the starter is hungry. Stir it in or pour it off and feed.

Is a dry crust on the surface a problem?

No. Remove the crust and use the soft starter underneath.

When can I bake with it again?

When it reliably doubles within a few hours after feeding and the top is domed.
